Ingredients

  • 2 lbs pork loin
  • 2 cups whole milk
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 325°F (160°C).
  2. Season the pork loin with salt and pepper.
  3. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.
  4. Sear the pork loin on all sides until browned. Remove the pork from the pot and set aside.
  5. In the same pot, add the sliced onion and minced garlic. Sauté until softened and fragrant.
  6. Return the pork loin to the pot and add the dried thyme and rosemary.
  7. Pour the whole milk over the pork loin, ensuring it is submerged in the liquid.
  8. Bring the milk to a simmer, then cover the pot and transfer it to the preheated oven.
  9. Braise the pork loin in the oven for approximately 2 hours, or until the meat is tender and easily shreds with a fork.
  10. Once done, remove the pot from the oven and transfer the pork loin to a cutting board.
  11. Allow the meat to rest for a few minutes before slicing.
  12. Meanwhile, strain the milk sauce in the pot, pressing down on the onions to extract all the flavors.
  13. Discard the solids and return the sauce to the pot.
  14. Place the pot over medium heat and simmer the sauce until it thickens slightly.
  15. Slice the pork loin and serve it with the creamy milk sauce.
  16. Garnish with fresh herbs, if desired, and enjoy!
