Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon key lime zest
  • 1/4 cup key lime juice
  • 1/4 cup buttermilk
  • 1/2 cup powdered sugar
  • 2 tablespoons key lime juice
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon key lime zest

Directions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, key lime zest, and key lime juice.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined.
  6. Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and cool completely on a wire rack.
  9. In the meantime, prepare the key lime frosting. In a small bowl, whisk together the powdered sugar, key lime juice, softened butter, and key lime zest until smooth and creamy.
  10. Once the cupcakes are completely cooled, frost them generously with the key lime frosting.
  11. Serve and enjoy!
