Ingredients

  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg

  • 1 chipotle pepper in adobo sauce, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil

  • 1 can (28 oz) crushed tomatoes

  • 1 lb spaghetti

Directions

  1. In a large bowl, mix together the ground beef, bread crumbs, Parmesan cheese, egg, onion, garlic, chipotle pepper, oregano, basil, salt, and pepper until well combined.
  2. Form the mixture into meatballs about 1 inch in diameter.
  3. Heat a large skillet over medium heat and add the meatballs. Cook until browned on all sides, about 8-10 minutes.
  4. Add the crushed tomatoes to the skillet and bring to a simmer. Cook for about 20 minutes, stirring occasionally.
  5. Meanwhile, cook the spaghetti according to package instructions until al dente. Drain and set aside.
  6. Stir the chopped parsley into the meatball and tomato sauce mixture.
