Ingredients

  • 1 lb sausage, sliced
  • 1 lb chicken, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped

  • 2 cups long grain rice
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • Green onions, for garnish
  • Hot sauce, for serving

Directions

  1. In a large pot or Dutch oven, cook the sausage over medium heat until browned. Remove and set aside.
  2. Add the diced chicken to the pot and cook until browned. Remove and set aside.
  3. In the same pot, sauté the onion, bell pepper, and celery until softened. Add garlic and cook for another minute.
  4. Add the rice to the pot and stir to coat in the vegetable mixture. Cook for 2-3 minutes.
  5. Pour in the chicken broth, diced tomatoes, Cajun seasoning, paprika, thyme, and oregano. Season with salt and pepper.
  6. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked through.
  7. Stir in the cooked sausage and chicken. Cook for another 5 minutes to heat through.
  8. Garnish with sliced green onions and serve with hot sauce on the side.
