Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed

  • 1/2 cup diced pancetta
  • 1 cup sliced mushrooms
  • 1 cup diced bell pepper
  • 1 cup chopped spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Directions

  1. In a food processor, pulse together the flour and butter until the mixture resembles coarse crumbs. Slowly add in the ice water and pulse until the dough comes together.
  2. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. In a skillet, cook the pancetta until crispy. Add in the mushrooms, bell pepper, and spinach, cooking until vegetables are softened. Season with salt and pepper.
  4. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and press into a pie dish.
