Delicious and Savory Meatball Cookies

Ingredients

• 1 lb ground beef
• 1/4 cup breadcrumbs
• 1/4 cup grated Parmesan cheese
• 1/4 cup chopped parsley
• 1/4 cup chopped onion
• 1 clove garlic, minced
• 1 egg
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 teaspoon dried oregano
• 1/4 teaspoon dried basil
• 1/4 teaspoon dried thyme
• 1 cup all-purpose flour
• 1/2 cup unsalted butter, cold and cubed
• 1/4 cup granulated sugar
• 1/4 teaspoon vanilla extract

Directions

1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, salt, black pepper, oregano, basil, and thyme. Mix until well combined.
3. Shape the meat mixture into small balls and place them on the prepared baking sheet. Bake for 15-20 minutes, or until cooked through and golden brown.
4. Meanwhile, in a separate bowl, combine the flour, butter, sugar, and vanilla extract. Mix with your hands until a dough forms.
5. Divide the dough into small portions and flatten each portion into a circle.
6. Remove the meatballs from the oven and let them cool slightly. Place one meatball on each circle of dough and fold the dough over the meatball, pinching the edges to seal.
7. Place the filled dough balls back on the baking sheet and bake for another 10-12 minutes, or until the cookies are lightly golden.
8. Remove from the oven and let the meatball cookies cool for a few minutes before serving.
