Ingredients

  • 2 cups cooked rice
  • 2 eggs, beaten
  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1/2 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon Marmite
  • Sliced green onions for garnish

Directions

  1. Heat one tablespoon of vegetable oil in a large pan or wok over medium heat.
  2. Add the beaten eggs to the pan and scramble them. Once cooked, remove the eggs from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of vegetable oil.
  4. Add the diced onion, minced garlic, diced carrot, and frozen peas. Stir-fry for about 5 minutes or until the vegetables are tender.
  5. Push the vegetables to one side of the pan and add the cooked rice to the other side. Break up any clumps of rice with a spatula.
  6. Combine the vegetables and rice together and add the soy sauce and Marmite. Stir well until the rice is evenly coated with the sauce.
  7. Add the scrambled eggs back into the pan and stir-fry for an additional 2-3 minutes to heat through.
  8. Remove the pan from heat and garnish with sliced green onions.
