Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cut into small pieces
  • 1/3 cup ice water
  • 6-8 ripe peaches, peeled and thinly sliced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 2 tablespoons turbinado sugar (for sprinkling)

Directions

  1. In a large mixing bowl, combine the flour, granulated sugar, and salt.
  2. Add the cold butter pieces and mix with a pastry cutter until the mixture resembles coarse crumbs.
  3. Slowly add the ice water and mix until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. On a floured surface, roll out the dough into a rough circle about 1/4 inch thick.
  6. Transfer the dough to a baking sheet lined with parchment paper.
  7. In a separate bowl, combine the sliced peaches, brown sugar, cinnamon, and lemon juice.
  8. Arrange the peach mixture in the center of the dough, leaving a border around the edges.
  9. Fold the edges of the dough over the filling, slightly overlapping as you go.
  10. Brush the edges of the dough with the beaten egg and sprinkle with turbinado sugar.
  11. Bake the galette for 35-40 minutes, or until the crust is golden brown and the peaches are tender.
