Ingredients

  • 1 pound salmon fillets
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers
  • 1/4 cup chopped fresh parsley

Directions

  1. Season the salmon fillets with salt and pepper.
  2. Select the 'Saute' function on the Instant Pot and heat the olive oil.
  3. Add the seasoned salmon fillets to the Instant Pot and cook for 2-3 minutes on each side, until lightly browned. Remove the salmon from the Instant Pot and set aside.
  4. Add the butter to the Instant Pot and melt it.
  5. Add the minced garlic and saute for about 1 minute, until fragrant.
  6. Add the chicken broth to the Instant Pot and stir to deglaze the pot, scraping up any browned bits from the bottom.
  7. Turn off the 'Saute' function and add the lemon juice and capers to the Instant Pot.
  8. Place the salmon fillets back into the pot, on top of the sauce.
  9. Close the lid of the Instant Pot and set the valve to the 'Sealing' position.
  10. Select the 'Pressure Cook' or 'Manual' setting and cook on high pressure for 5 minutes.
  11. Once the cooking time is up, allow the Instant Pot to naturally release the pressure for 5 minutes, then manually release any remaining pressure.
  12. Carefully remove the salmon fillets from the Instant Pot and transfer them to a serving dish.
  13. Garnish with chopped fresh parsley and serve hot.
