  • 1/4 cup dark rum
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Directions

  1. Preheat the oven to 325°F (165°C).
  2. In a large mixing bowl, combine the brazil nuts, walnuts, pecans, dried cranberries, dried apricots, dates, and raisins. Mix well and set aside.
  3. In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Add the molasses, eggs, rum, and vanilla extract to the butter and sugar mixture. Mix until well combined.
  5. In another bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg.

  7. Fold in the mixed nuts and dried fruits.
  8. Pour the batter into a greased and floured 9-inch (23 cm) square baking pan.
  9. Bake in the preheated oven for about 2 hours, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  11. Once cooled, wrap the fruitcake tightly with plastic wrap or aluminum foil.
