This soup combines the sweetness of banana squash and green apple with the earthy flavors of sweet potato to create a flavorful and hearty dish. It is perfect for a cozy night in or a festive gathering with friends and family.

Ingredients

  • 1 banana squash, peeled and diced
  • 1 sweet potato, peeled and diced
  • 1 green apple, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper, to taste
  • 1/4 cup coconut milk (optional)
  • Fresh parsley, for garnish

Directions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the banana squash, sweet potato, green apple, vegetable broth, cinnamon, nutmeg, salt, and pepper to the pot.
