Ingredients

  • 1 cup quinoa
  • 1 3/4 cups water
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 cup cherry tomatoes, halved

Directions
