Ingredients

  • 1 ¼ pounds of shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 can (14 ounces) of diced tomatoes
  • 1 can (14 ounces) of coconut milk
  • 1 tablespoon of tomato paste
  • 1 tablespoon of paprika
  • ½ teaspoon of cayenne pepper
  • Juice of 1 lime
  • Salt and pepper to taste
  • Chopped fresh cilantro, for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion becomes translucent.
  2. Add the bell peppers and jalapeno pepper to the pot and cook for an additional 5 minutes, or until the peppers start to soften.
  3. Stir in the tomato paste, paprika, and cayenne pepper, and cook for 1 minute to allow the spices to become fragrant.
  4. Add the diced tomatoes with their juice to the pot, followed by the coconut milk. Stir well to combine.
  5. Bring the mixture to a simmer and add the shrimp. Cook for 5-7 minutes, or until the shrimp are pink and cooked through.
