  • 2 cups all-purpose flour

  • 2/3 cup shortening
  • 6-8 tablespoons ice water
  • 4 large poblano peppers

  • 4 eggs
  • 1 cup milk
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin

Directions

  1. In a large mixing bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add ice water, tossing with a fork until a ball forms. Divide dough in half, with one portion slightly larger than the other. Roll out larger portion to fit a 9-inch pie plate. Transfer pastry to pie plate.
  2. Preheat the oven to 375°F (190°C).
  3. Place the poblano peppers directly over a gas flame or under the broiler until their skins char and blister, turning occasionally. Transfer the roasted peppers to a large bowl, cover tightly with plastic wrap, and let stand for about 10 minutes. This allows the peppers to steam and makes them easier to peel.
  4. Uncover the peppers and, using your fingers or a small knife, remove the charred skin. Make a lengthwise slit in each pepper and carefully remove the seeds and membranes. Rinse the peppers under cold water and pat dry with paper towels.
  5. Cut the roasted peppers into wide strips and layer them in the prepared pie crust. Sprinkle the shredded Monterey Jack and cheddar cheeses over the peppers.
