Ingredients

  • 1 whole chicken, cleaned and cut into pieces
  • 4 large potatoes, washed and cut into chunks
  • 1 onion, sliced
  • 4 cloves of garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Aluminum foil

Directions

  1. Dig a hole in the ground large enough to hold a Dutch oven or a deep baking dish.
  2. Layer the bottom of the Dutch oven with half of the sliced onions and minced garlic.
  3. Place the chicken pieces on top of the onions and garlic.
  4. Add the potato chunks on top of the chicken.
  5. Drizzle the olive oil over the chicken and potatoes, and season with salt and pepper.
  6. Top with the remaining onions and garlic.
  7. Cover the Dutch oven with aluminum foil, making sure it is tightly sealed.
  8. Place the Dutch oven in the hole in the ground and cover with more dirt to completely bury it.
  9. Build a small fire on top of the covered Dutch oven and let it cook for 3 hours.
  10. Carefully uncover the Dutch oven, dig it out of the ground, and serve the delicious underground baked chicken and potatoes.
