Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 zucchini, diced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup small pasta, such as ditalini
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving
Directions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender, about 5 minutes.
