  • 1 lb beef stew meat, cubed

  • 1 cup water

Directions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
  3. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  4. Add the sliced carrots and celery to the pot and cook for about 5 minutes, until slightly tender.
  5. Return the beef stew meat to the pot and pour in the diced tomatoes, beef broth, and water.
  6. Stir in the dried thyme, dried oregano, and bay leaf. Season with salt and black pepper to taste.
  7. Bring the soup to a boil, then reduce heat to low. Cover the pot and simmer for 45 minutes to 1 hour, or until the beef is tender.
  8. Add the frozen corn and peas to the soup and cook for an additional 5 minutes.
  9. Remove the bay leaf and discard.
