Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • 1 can (28 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried parsley
  • Salt and black pepper, to taste

Directions

  1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, milk, onion, garlic, egg, salt, black pepper, dried oregano, dried basil, and red pepper flakes. Mix until well combined.
  2. Shape the mixture into meatballs, about 1 inch in diameter.
  3. Select the sauté function on the instant pot and heat the olive oil. Add the meatballs in batches and cook until browned on all sides. Remove the browned meatballs from the pot and set aside.
  4. In the same pot, add the crushed tomatoes, tomato paste, sugar, dried thyme, dried rosemary, dried sage, and dried parsley. Stir well to combine.
  5. Return the meatballs to the pot and stir to coat them in the sauce.
  6. Secure the lid on the instant pot and set the vent to sealing position. Select the manual or pressure cook function and set the timer for 10 minutes on high pressure.
  7. Once the cooking time is up, allow the pressure to release naturally for 5 minutes, then do a quick release of the remaining pressure.
  8. Carefully remove the lid and season the meatballs and sauce with salt and black pepper, to taste.
  9. Serve the meatballs over pasta or with crusty bread. Enjoy!
