Ingredients

  • 2 pounds of fresh spinach
  • 1 tablespoon of olive oil
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 1 cup of cottage cheese
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of nutmeg

Directions

  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool for a few minutes.
