Ingredients

  • 1 cup cooked quinoa
  • 1 can black beans, rinsed and drained
  • 1/2 cup shredded carrots
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/3 cup bread crumbs
  • 1 egg, lightly beaten
  • Salt and pepper to taste
  • 4 burger buns

Directions

  1. In a large bowl, mash the black beans with a fork or potato masher until they are partially mashed.
