Ingredients

  • 8 slices of whole wheat bread
  • 1 package of tempeh (8 ounces)
  • 4 tablespoons of soy sauce
  • 2 tablespoons of maple syrup
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of olive oil
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper
  • 1 cup of lettuce, shredded
  • 1 tomato, sliced
  • 1/2 red onion, thinly sliced
  • 4 tablespoons of vegan mayonnaise
  • 4 teaspoons of Dijon mustard

Directions

  1. In a shallow bowl, whisk together the soy sauce, maple syrup, apple cider vinegar, olive oil, smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper.
  2. Cut the tempeh into thin slices and place them in the marinade. Let it marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium heat.
  4. Grill the marinated tempeh slices for about 2-3 minutes per side, or until they are slightly charred and crispy.
  5. Toast the slices of whole wheat bread until golden brown.
  6. Spread vegan mayonnaise and Dijon mustard on one side of each toasted bread slice.
  7. Layer the grilled tempeh slices, shredded lettuce, tomato slices, and red onion slices on top of the mayo and mustard.
  8. Top with another slice of bread, mayo and mustard side down.
  9. Cut the sandwiches in half and serve immediately.
