- 4 large bell peppers (any color)

- 1/2 teaspoon chili powder

- 1 cup cooked brown rice

- 1/4 cup nutritional yeast
- 1/4 cup fresh cilantro, chopped

Directions
- Preheat the oven to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until softened.
