Ingredients

  • 1 large head of cauliflower
  • 4 slices of bacon
  • 1 cup shredded cheddar cheese
  • 4 green onions, thinly sliced
  • 1/4 cup sour cream
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Remove the leaves and stem from the cauliflower, and cut it into florets.
  3. Place the cauliflower florets in a large pot of boiling water and cook for 5-7 minutes, or until tender.
  4. While the cauliflower is cooking, cook the bacon in a skillet until crispy. Remove the bacon from the skillet, crumble it into small pieces, and set aside.
  5. Once the cauliflower is done cooking, drain it well and transfer it to a baking dish.
  6. Season the cauliflower with salt and pepper, and sprinkle half of the shredded cheese over the top.
  7. Place the dish in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove the dish from the oven and top the cauliflower with the crumbled bacon, sliced green onions, and remaining shredded cheese.
  9. Return the dish to the oven for an additional 5 minutes, or until the cheese is fully melted and the toppings are heated through.
  10. Remove from the oven and let the loaded cauliflower cool for a few minutes.
  11. Serve hot with a dollop of sour cream on top. Enjoy!
