Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup water
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Directions

  1. In a small bowl, combine soy sauce, water, honey, garlic, and ginger. Mix well to combine and set aside.
  2. Place chicken thighs in the Instant Pot.
  3. Pour the teriyaki sauce over the chicken.
  4. Close the Instant Pot lid and set the valve to the sealing position.
  5. Cook on high pressure for 8 minutes.
  6. Once the cooking time is complete, let the pressure release naturally for 5 minutes, then do a quick release of any remaining pressure.
  7. Remove the chicken thighs from the Instant Pot and set aside.
  8. In a small bowl, dissolve cornstarch in water to make a slurry.
  9. Set the Instant Pot to sauté mode and add the cornstarch slurry to the sauce mixture.
  10. Stir well and cook for 2-3 minutes, or until the sauce has thickened.
  11. Turn off the Instant Pot and return the chicken thighs to the pot. Mix well to coat the chicken in the teriyaki sauce.
