Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 4 tablespoons of butter, divided
  • 4 cloves of garlic, minced
  • 1/2 teaspoon of red pepper flakes
  • 1/4 cup of chicken broth
  • 1/4 cup of white wine
  • Juice of 1 lemon
  • 3 medium zucchini, spiralized
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Directions

  1. In a large skillet, melt 2 tablespoons of butter over medium heat.
  2. Add the minced garlic and red pepper flakes to the skillet and sauté for 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the chicken broth, white wine, and lemon juice. Bring to a simmer and cook for 3-4 minutes to reduce the sauce.
  5. While the sauce is simmering, heat the remaining 2 tablespoons of butter in a separate skillet over medium heat.
  6. Add the spiralized zucchini noodles to the skillet and sauté for 3-4 minutes until tender.
  7. Season the zucchini noodles with salt and pepper to taste.
  8. Divide the zucchini noodles onto plates and top with shrimp. Spoon the sauce over the shrimp and garnish with fresh parsley.
