Ingredients

  • 3 large eggplants
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded vegan cheese
  • Fresh parsley for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants lengthwise into 1/4-inch thick slices.
  3. Place the eggplant slices on a baking sheet and brush both sides with olive oil. Bake for 10-15 minutes or until they start to soften.
  4. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the onion becomes translucent.
  5. Add the diced tomatoes, dried oregano, dried thyme, paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
  6. Grease a baking dish with olive oil. Layer half of the eggplant slices on the bottom of the dish.
  7. Spread half of the tomato mixture over the eggplant slices. Sprinkle half of the shredded vegan cheese on top.
  8. Repeat with another layer of eggplant slices, tomato mixture, and vegan cheese.
  9. Cover the baking dish with aluminum foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and slightly golden.
  11. Garnish with fresh parsley before serving.
