Ingredients
- 1 cup jasmine rice
- 1/2 cup canned sweet corn kernels, drained
- 1/2 cup diced carrots
- 1/2 cup diced mushrooms
- 1/2 cup diced green onions
- 4 cups vegetable broth
- 1 cup water
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- Salt and pepper to taste
- Fresh cilantro for garnish
Directions
- Rinse the jasmine rice under cold water until the water runs clear. Drain the rice and add it to the Instant Pot.
- Add the canned sweet corn kernels, diced carrots, diced mushrooms, diced green onions, vegetable broth, water, soy sauce, sesame oil, minced ginger, and minced garlic to the Instant Pot with the rice.
- Close the lid of the Instant Pot and set it to Manual mode for 20 minutes on high pressure. Make sure the pressure valve is set to the Sealing position.
- Once the cooking time is complete, allow the pressure to naturally release for 10 minutes. Then, carefully turn the pressure valve to the Venting position to release any remaining pressure.
- Remove the lid and give the congee a good stir. Season with salt and pepper to taste.
- Ladle the vegan corn congee into bowls and garnish with fresh cilantro.
