Ingredients

  • 2 large zucchini
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Directions

  1. Using a spiralizer, spiralize the zucchini into thin noodles. If you don't have a spiralizer, you can use a julienne peeler or a vegetable peeler to create zucchini ribbons.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, and sauté until fragrant, about 1 minute.
  3. Add the zucchini noodles to the skillet and sauté for 2-3 minutes, or until they are just tender. Be careful not to overcook them, as they can become mushy.
  4. Add the cherry tomatoes to the skillet and sauté for another 2 minutes, or until they are slightly soft.
