Ingredients

  • 1 pound fresh green beans, trimmed
  • 8 ounces mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crispy fried onions

Directions

  1. Preheat oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the green beans and cook until crisp-tender, about 5 minutes. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the mushrooms, onion, and garlic. Cook until the mushrooms are browned and the onion is translucent, about 7-8 minutes.
  4. Sprinkle the flour over the mushroom mixture and stir well to combine. Cook for 1-2 minutes to cook off the raw flavor of the flour.
  5. Slowly pour in the broth while stirring constantly to avoid lumps. Cook until the sauce thickens, about 5 minutes.
  6. Stir in the heavy cream, Parmesan cheese, dried thyme, salt, and black pepper. Cook for an additional 2-3 minutes until the cheese is melted and the sauce is smooth.
  7. Remove the skillet from heat. Add the cooked green beans and stir until well coated with the sauce.
  8. Transfer the mixture to a baking dish and spread evenly. Top with crispy fried onions.
  9. Bake in the preheated oven for 20-25 minutes or until the casserole is bubbly and the onions are golden brown.
  10. Remove from the oven and let it cool for a few minutes before serving. Enjoy!
