Ingredients

  • 1 can of black beans, drained and rinsed
  • 1 small onion, diced

  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped fresh cilantro
  • Sour cream, salsa, and guacamole for serving

Directions

  1. In a large skillet, heat some oil over medium heat.
  2. Add the diced onion, garlic, bell pepper, and jalapeno pepper (if using), and sauté until the vegetables are softened.
  3. Add the black beans, cumin powder, chili powder, salt, and pepper to the skillet.
  4. Cook for a few minutes until the flavors combine and the beans are heated through.
  5. Remove from heat and set aside.
  6. Place a tortilla on a flat surface and sprinkle some shredded cheese on one half of the tortilla.
  7. Add a spoonful of the bean mixture on top of the cheese.
  8. Sprinkle some chopped cilantro on top of the beans.
  9. Fold the other half of the tortilla over the filling to create a half-moon shape.
  10. Repeat with the remaining tortillas and filling.
  11. Heat a large skillet or griddle over medium heat.
  12. Place the folded tortillas on the skillet and cook for a few minutes on each side until the cheese melts and the tortillas are crispy.
  13. Remove from heat and let cool for a minute before slicing into wedges.
