Ingredients
- 2 cups basmati rice
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 onion, thinly sliced
- 2 tomatoes, chopped
- 1/4 cup yogurt
- 1/4 cup chopped cilantro
- 1/4 cup mint leaves
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp ghee
- 2 cups water
Directions
- Wash and soak basmati rice in water for 30 minutes.
- In a large pan, heat ghee and add cumin seeds. Sauté onions until golden brown.
- Add mixed vegetables, ginger-garlic paste, and tomatoes. Cook until vegetables are tender.
- Stir in garam masala, turmeric powder, red chili powder, salt, yogurt, mint leaves, and cilantro.
- Drain water from soaked rice and add it to the pan. Mix well.
- Add water and bring to a boil. Reduce heat, cover, and cook for 20 minutes.
- Once the rice is cooked, fluff it with a fork and serve hot with raita or pickle.
