Ingredients

  • 2 cups basmati rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/4 cup yogurt
  • 1/4 cup chopped cilantro
  • 1/4 cup mint leaves
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp ghee
  • 2 cups water

Directions

  1. Wash and soak basmati rice in water for 30 minutes.
  2. In a large pan, heat ghee and add cumin seeds. Sauté onions until golden brown.
  3. Add mixed vegetables, ginger-garlic paste, and tomatoes. Cook until vegetables are tender.
  4. Stir in garam masala, turmeric powder, red chili powder, salt, yogurt, mint leaves, and cilantro.
  5. Drain water from soaked rice and add it to the pan. Mix well.
  6. Add water and bring to a boil. Reduce heat, cover, and cook for 20 minutes.
  7. Once the rice is cooked, fluff it with a fork and serve hot with raita or pickle.
