Ingredients

  • 6 slices of bacon, chopped
  • 1 medium-sized onion, diced
  • 2 cloves of garlic, minced

  • 4 cups of chicken or vegetable broth
  • 4 cups of frozen corn kernels
  • 1 cup of diced potatoes

Directions

  1. In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate. Leave about 2 tablespoons of bacon fat in the pot.
