Ingredients

  • 2 ripe plantains
  • 4 cups vegetable oil
  • 1 cup sliced mushrooms
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup lettuce, shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro leaves
  • 1/4 cup sour cream

Directions

  1. Peel the plantains and cut them into 1-inch thick slices.
  2. In a deep skillet, heat the vegetable oil over medium-high heat.
  3. Fry the plantain slices until golden brown and crispy, about 3-4 minutes per side.
  4. Remove the plantains from the oil and drain them on a paper towel-lined plate.
  5. In a separate skillet, heat some oil over medium heat.
  6. Add the diced onion and minced garlic to the skillet and sauté until translucent.
  7. Add the sliced mushrooms, cumin powder, paprika, cayenne pepper, salt, and pepper to the skillet.
