- 1 cup black mushrooms (djon djon), dried
- 4 cups water
- 1 onion, finely chopped

- 2 tablespoons vegetable oil
- 1 teaspoon thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon turmeric
- 1 tablespoon parsley, chopped (for garnish)
Directions
- In a large bowl, soak the black mushrooms in 2 cups of water for about 1 hour or until they soften.
- Drain the mushrooms, reserving the soaking liquid. Rinse the mushrooms thoroughly to remove any dirt or debris.
- In a saucepan, combine the rinsed mushrooms, reserved soaking liquid, and 2 cups of fresh water. Bring to a boil over medium heat, then reduce the heat to low and simmer for 15 minutes.
- While the mushrooms are simmering, heat the vegetable oil in a separate large pot over medium heat. Add the chopped onion, minced garlic, and diced green bell pepper. Saute until the onion becomes translucent and the vegetables are tender, about 5 minutes.
- Add the rinsed rice to the pot with the sauteed vegetables. Stir well to coat the rice with the oil and vegetables.
- Drain the cooked mushrooms, reserving the liquid. Chop the mushrooms into small pieces and add them to the pot with the rice.
