Ingredients

  • 1 teaspoon thyme
  • 1 teaspoon salt

  • ½ teaspoon paprika

Directions

  1. In a large bowl, soak the black mushrooms in 2 cups of water for about 1 hour or until they soften.
  2. Drain the mushrooms, reserving the soaking liquid. Rinse the mushrooms thoroughly to remove any dirt or debris.
  3. In a saucepan, combine the rinsed mushrooms, reserved soaking liquid, and 2 cups of fresh water. Bring to a boil over medium heat, then reduce the heat to low and simmer for 15 minutes.
  4. While the mushrooms are simmering, heat the vegetable oil in a separate large pot over medium heat. Add the chopped onion, minced garlic, and diced green bell pepper. Saute until the onion becomes translucent and the vegetables are tender, about 5 minutes.
  5. Add the rinsed rice to the pot with the sauteed vegetables. Stir well to coat the rice with the oil and vegetables.
  6. Drain the cooked mushrooms, reserving the liquid. Chop the mushrooms into small pieces and add them to the pot with the rice.
  7. Measure the reserved mushroom liquid and add enough water to make 4 cups of liquid. Pour the liquid into the pot with the rice and mushrooms. Stir in the thyme, salt, black pepper, paprika, and turmeric.
  8. Bring the pot to a boil, then reduce the heat to low and cover. Cook for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
