Ingredients

  • 2 cans of black-eyed peas, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 red bell pepper, finely chopped
  • 1/4 cup of chopped fresh cilantro
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh lime juice
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of chili powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper (optional)

Directions

  1. In a large bowl, mash half of the black-eyed peas with a fork or potato masher.
  2. In a skillet, heat olive oil over medium heat. Add the onion, garlic, jalapeno pepper, and red bell pepper. Cook until the vegetables are soft and lightly browned, about 5 minutes.
  3. Add the mashed black-eyed peas, whole black-eyed peas, cilantro, lime juice, cumin, chili powder, salt, black pepper, and cayenne pepper (if using) to the skillet. Stir well to combine.
  4. Reduce the heat to low and let the mixture simmer for 15-20 minutes, stirring occasionally.
  5. Remove from heat and let the dip cool slightly before serving.
