Ingredients

  • 2 bell peppers, sliced
  • 3 tomatoes, pureed
  • 2 potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro leaves for garnish

Directions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the cumin seeds and allow them to splutter.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Add the minced garlic, grated ginger, and slit green chilies. Sauté for a minute.
  5. Add the turmeric powder, red chili powder, ground coriander, ground cumin, and salt. Mix well.
