Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb clams, scrubbed
- 1 lb mussels, cleaned and debearded
- 1 lb squid, cleaned and sliced into rings
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup frozen peas
- 2 cups Arborio rice
- 4 cups chicken broth
- 1 tsp saffron threads
- 1 tsp smoked paprika
- salt and pepper to taste
- 1/4 cup chopped parsley
- 2 tbsp olive oil
Directions
- In a large paella pan or skillet, heat olive oil over medium heat.
- Add onion, garlic, and peppers. Cook until softened, about 5 minutes.
- Add rice, saffron, and smoked paprika. Cook for 2 minutes, stirring constantly.
- Pour in chicken broth and bring to a simmer. Cook for 10 minutes, stirring occasionally.
- Add shrimp, clams, mussels, and squid. Cover and cook for another 10 minutes.
- Add peas and season with salt and pepper. Cook for 5 more minutes.
- Remove from heat and let it sit for 5 minutes. Garnish with parsley before serving.
