  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup frozen peas
  • 2 cups Arborio rice
  • 4 cups chicken broth
  • 1 tsp saffron threads
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • 1/4 cup chopped parsley
  • 2 tbsp olive oil

Directions

  1. In a large paella pan or skillet, heat olive oil over medium heat.
  2. Add onion, garlic, and peppers. Cook until softened, about 5 minutes.
  3. Add rice, saffron, and smoked paprika. Cook for 2 minutes, stirring constantly.
  4. Pour in chicken broth and bring to a simmer. Cook for 10 minutes, stirring occasionally.
  5. Add shrimp, clams, mussels, and squid. Cover and cook for another 10 minutes.
  6. Add peas and season with salt and pepper. Cook for 5 more minutes.
  7. Remove from heat and let it sit for 5 minutes. Garnish with parsley before serving.
