Indulge in the rich and buttery flavor of traditional Linzer cookies filled with raspberry jam. These festive cookies are perfect for holiday gatherings, parties, or simply enjoying with a cup of coffee or tea.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Directions

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In a separate bowl, cream butter and sugar until light and fluffy.
  3. Add egg and vanilla extract, mix well.
  4. Gradually add the dry ingredients to the wet ingredients and mix until the dough comes together.
  5. Divide the dough in half, form into discs, wrap in plastic wrap, and refrigerate for 1 hour.
  6. Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
  7. Roll out one disc of dough on a floured surface to 1/4 inch thickness.
  8. Using a round cookie cutter, cut out an even number of cookies.
  9. Use a smaller round cookie cutter to cut out the centers of half of the cookies.
  10. Bake the cookies for 10-12 minutes or until the edges are slightly golden brown.
  11. Let the cookies cool completely on a wire rack.
  12. Spread raspberry jam on the whole cookies and place the cutout cookies on top to create sandwiches.
  13. Dust the cookies with powdered sugar before serving.
