Ingredients

  • 2 cups basmati rice, washed and soaked for 30 minutes
  • 1 large onion, thinly sliced
  • 1 cup mixed vegetables (such as peas, carrots, beans)
  • 1/2 cup plain yogurt
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons ghee or oil
  • 2 cups water

Directions

  1. Heat ghee or oil in a large pot over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add sliced onions and sauté until golden brown.
  4. Add ginger, garlic, and green chilies. Cook for 2 minutes.
  5. Add mixed vegetables, turmeric, red chili powder, and salt. Cook for 5 minutes.
  6. Add drained rice and mix well.
  7. Add water, yogurt, mint, and cilantro. Bring to a boil.
  8. Lower the heat, cover the pot, and simmer for 15-20 minutes.
  9. Fluff the rice gently with a fork. Serve hot with raita or salad.
