Ingredients
- 1 cup strong brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- Cocoa powder, for dusting
Directions
- In a medium bowl, combine the mascarpone cheese, heavy cream, sugar, and vanilla extract. Mix until smooth and creamy.
- In a shallow dish, combine the coffee and coffee liqueur. Dip each ladyfinger into the coffee mixture, making sure to coat both sides.
- Layer half of the soaked ladyfingers in the bottom of a 9x9 inch dish. Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and mascarpone mixture.
- Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld together.
