Ingredients

  • 1 lb pork tenderloin, sliced into thin strips
  • 2 cups cooked jasmine rice
  • 3 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 carrot, finely diced
  • 1 red bell pepper, finely diced
  • 1 cup frozen peas
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 2 eggs, beaten
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving

Directions

  1. In a bowl, marinate the pork strips with 1 tablespoon soy sauce and 1 tablespoon oyster sauce. Set aside for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated pork and stir-fry until cooked through, about 3-4 minutes. Remove the pork from the skillet and set aside.
  3. In the same skillet, heat another tablespoon of vegetable oil. Add the minced garlic and chopped onion, and sauté until fragrant and onions are translucent.
  4. Add the diced carrot, bell pepper, and frozen peas to the skillet. Stir-fry for 2-3 minutes, or until the vegetables are tender-crisp.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until just cooked, then mix them into the vegetables.
  6. Add the cooked jasmine rice to the skillet, breaking up any clumps with a spatula. Drizzle the remaining soy sauce, oyster sauce, fish sauce, and sugar over the rice. Stir-fry everything together for 2-3 minutes, ensuring the rice is well coated with the sauces.
  7. Return the cooked pork to the skillet and toss to combine with the rice and vegetables. Cook for an additional 2 minutes, or until the pork is heated through.
  8. Remove the skillet from heat and garnish with sliced green onions and chopped cilantro. Serve the Thai Pork Fried Rice hot with lime wedges on the side. Enjoy!
