  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 4 eggs, beaten
  • 1/4 cup milk

Directions

  1. Preheat the oven to 400°F (200°C).
  2. On a lightly floured surface, roll out each sheet of puff pastry to a thickness of about 1/8 inch.
  3. Using a round cookie cutter or a glass, cut out six circles from each sheet of pastry.
  4. Gently press each pastry circle into the cups of a muffin tin, making sure to cover the bottom and sides evenly.
  5. In a mixing bowl, combine the spinach, ricotta cheese, Parmesan cheese, parsley, garlic, salt, pepper, and nutmeg.
  6. In a separate bowl, whisk together the eggs and milk.
  7. Pour the egg mixture into the spinach and cheese mixture and stir until well combined.
  8. Spoon the filling into the pastry cups, filling each one almost to the top.
  9. Bake in the preheated oven for 20-25 minutes, or until the quiches are golden brown and set in the center.
  10. Remove from the oven and let cool for a few minutes before removing from the muffin tin.
