Directions

  1. In a large mixing bowl, whisk together the gluten-free flour, granulated sugar, baking powder, salt, and xanthan gum.
  2. Add the milk, melted butter, vanilla extract, and egg to the dry ingredients. Mix until well combined to form a dough.
  3. On a floured surface, roll out the dough into a rectangle shape.
  4. Spread the softened butter evenly over the dough, leaving a small border around the edges.
  5. In a separate bowl, combine the brown sugar and ground cinnamon. Sprinkle the mixture over the buttered dough.
  6. Starting from one of the longer sides, tightly roll up the dough into a log.
  7. Using a sharp knife, cut the log into 12 equal-sized rolls.
  8. Place the cinnamon rolls in a greased baking dish, leaving some space between each roll.
  9. Cover the baking dish with plastic wrap and let the rolls rise in a warm place for about 30 minutes.
  10. Preheat the oven to 350°F (175°C).
  11. Bake the cinnamon rolls for 25-30 minutes or until golden brown.
  12. While the rolls are baking, prepare the icing. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract.
  13. Once the cinnamon rolls are out of the oven and slightly cooled, drizzle the icing over the top.
