Ingredients

Directions

  1. In a large mixing bowl, combine the flour and cold, cubed butter. Using a pastry cutter or your hands, cut the butter into the flour until the mixture resembles coarse crumbs.
  2. Add the cold water to the mixture and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Using a round cookie cutter or a glass, cut out circles that are slightly larger than the molds of a muffin tin. Gently press each circle into the greased molds.
  5. In a separate bowl, whisk together the brown sugar, corn syrup, melted butter, vanilla extract, and salt until well combined.
  6. If using, add raisins or pecans to each tart shell, then pour the filling mixture over top, filling each tart shell about 2/3 full.
  7. Place the tart-filled muffin tin in the preheated oven and bake for 15-18 minutes, or until the pastry is golden and the filling is set with a slight jiggle in the center.
  8. Remove from the oven and let the tarts cool in the tin for 10 minutes. Carefully remove the tarts from the tin and transfer them to a wire rack to cool completely.
