Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup cold water
- 1 cup brown sugar
- 1/2 cup corn syrup
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup raisins or pecans (optional)
Directions
- In a large mixing bowl, combine the flour and cold, cubed butter. Using a pastry cutter or your hands, cut the butter into the flour until the mixture resembles coarse crumbs.
- Add the cold water to the mixture and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
- On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Using a round cookie cutter or a glass, cut out circles that are slightly larger than the molds of a muffin tin. Gently press each circle into the greased molds.
- In a separate bowl, whisk together the brown sugar, corn syrup, melted butter, vanilla extract, and salt until well combined.
- If using, add raisins or pecans to each tart shell, then pour the filling mixture over top, filling each tart shell about 2/3 full.
- Place the tart-filled muffin tin in the preheated oven and bake for 15-18 minutes, or until the pastry is golden and the filling is set with a slight jiggle in the center.
- Remove from the oven and let the tarts cool in the tin for 10 minutes. Carefully remove the tarts from the tin and transfer them to a wire rack to cool completely.
- Serve the butter tarts at room temperature or slightly warmed for a deliciously gooey treat.
