- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 2 cans (28 ounces each) crushed tomatoes
- 1 cup vegetable broth
- 1 tablespoon brown sugar
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 4 slices French bread
- 4 ounces brie cheese
- 2 tablespoons butter
Directions
- Heat olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the red pepper flakes, crushed tomatoes, vegetable broth, brown sugar, basil, oregano, salt, and black pepper to the pot. Stir well and bring to a simmer.
- Reduce heat to low and let the soup simmer for 20 minutes to allow the flavors to meld together.
- While the soup is simmering, preheat a grill pan or skillet over medium heat.
- Spread butter on one side of each slice of French bread.
- Place the bread slices, buttered side down, on the hot grill pan. Grill for 2 minutes until golden brown and crispy.
- Flip the bread slices over and top each with a slice of brie cheese. Grill for another 2 minutes until the cheese is melted and bubbly.
- Remove the grilled brie toast from the pan and set aside.
- Using an immersion blender or regular blender, blend the tomato bisque until smooth and creamy.
