  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 large flour tortillas

Directions

  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, brown the ground beef over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.
  3. Stir in the cumin, chili powder, paprika, cayenne pepper (if desired), salt, and black pepper. Cook for an additional 2 minutes to let the spices meld with the meat.
  4. Add the black beans, corn, diced tomatoes, and enchilada sauce to the skillet. Stir well to combine all the ingredients. Simmer for 5 minutes, or until heated through.

  8. Repeat the layers with the remaining 4 tortillas, meat mixture, and cheeses.
  9. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  11. Allow the casserole to cool for a few minutes before serving.
  12. Serve hot with your favorite toppings like sour cream, guacamole, salsa, and chopped cilantro.
