Ingredients

  • 8 egg roll wrappers
  • 1 cup cooked rice noodles

  • 2 tablespoons tamarind paste
  • 2 tablespoons soy sauce

Directions

  1. In a small bowl, mix together tamarind paste, soy sauce, brown sugar, and lime juice to make the Pad Thai sauce.
  2. In a large skillet, heat oil over medium heat. Add tofu and cook until crispy. Remove from the skillet and set aside.
  3. In the same skillet, add julienned carrot, sliced bell pepper, and sliced green onions. Cook for 2-3 minutes until slightly softened.
  4. Add the cooked rice noodles, bean sprouts, and Pad Thai sauce to the skillet. Stir well to combine and cook for an additional 2 minutes.
  5. Remove the skillet from heat and let the mixture cool slightly.
  6. Take one egg roll wrapper and place it on a clean surface. Spoon about 2 tablespoons of the Pad Thai filling onto the wrapper, leaving space at the edges.
  7. Fold the sides of the wrapper over the filling and roll it tightly, sealing the edges with a bit of water.
  8. Repeat the process with the remaining egg roll wrappers and filling.
  9. In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Fry the egg rolls in batches for about 3-4 minutes until golden brown and crispy.
