  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas
  • 1 cup enchilada sauce
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until the onion becomes translucent.
  3. Add the diced bell peppers, zucchini, corn kernels, and black beans to the skillet. Cook for 5-7 minutes, until the vegetables are slightly tender.
  4. In a small bowl, mix together the chili powder, cumin, paprika, salt, and black pepper. Sprinkle this seasoning mixture over the vegetables in the skillet and stir well to coat.
  5. Remove the skillet from heat and stir in the sour cream until well combined. Set aside.
