Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup sun-dried tomatoes, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
Directions
- Turn on the Instant Pot to sauté mode. Add olive oil, onion, and garlic. Sauté for 2-3 minutes.
- Add chicken breasts and sear on both sides for 2 minutes each.
- Add chicken broth, sun-dried tomatoes, oregano, basil, salt, and pepper. Stir to combine.
- Close the Instant Pot lid and set to pressure cook on high for 8 minutes.
