Ingredients
- 2 bunches of fresh spinach, washed and chopped
- 200g paneer, cubed
- 1 large onion, chopped
- 2 tomatoes, chopped
- 3-4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp vegetable oil
Directions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add minced garlic and grated ginger, and sauté for another minute.
- Add chopped tomatoes and cook until they are soft and mushy.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- Add chopped spinach and cook until wilted.
- Allow the mixture to cool and then blend into a smooth paste.
- Return the mixture to the pan, add cubed paneer, garam masala, and a little water if needed. Cook for a few more minutes.
- Serve hot with rice or roti.
