Ingredients

  • 2 bunches of fresh spinach, washed and chopped
  • 200g paneer, cubed
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 3-4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp vegetable oil

Directions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add minced garlic and grated ginger, and sauté for another minute.
  3. Add chopped tomatoes and cook until they are soft and mushy.
  4. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  5. Add chopped spinach and cook until wilted.
  6. Allow the mixture to cool and then blend into a smooth paste.
  7. Return the mixture to the pan, add cubed paneer, garam masala, and a little water if needed. Cook for a few more minutes.
  8. Serve hot with rice or roti.
